Dave and Amy, we installed a reverse osmosis system on our bus 5 years ago and have never regretted it. Just remember that ro backwashes literally gallons of water. Wasted water. So only use it when connected to tap

Does RO control water staining of any light coloured sinks/toilets?

Depending on what cartridges you have in your RO system yes it can reduce Iron in the water as well as calcium scale.
